I grew up having gingerbread men from Goode’s Bakery in Jacksonville Fl. They have long since closed their doors and though I’ve tried, have never found their trademark gingerbread cookie; until now. Eloise's Pastries has brought back my sweet memory!

I love Springerle cookies, but have had more and more difficulty finding them, I am happy to say that these are some of the best I’ve had. My personal favorite is the original anise; but the citrus is running a close second and the vanilla are quite good.
